Hello,

My name Is Joshua McFadden I am a chef with extensive experience in restaurants, and also as a private chef. I have for sometime been interested in finding a position on a boat for the 2009 season. Ideally I am interested in working on a smaller boat, where my fiancé and I could take care of all the ships food and beverage needs, from crew meals and dinner parties, to cocktails and bites at sunset.

My food approach is simple, clean, and fresh with an aggressive seasonal and local approach. I have worked in some of the best restaurants in the Country in San Francisco, Chicago and New York. I have worked with Mario Batali, Dan Barber, David Chang and Andrew Feinberg… I was awarded two stars by Frank Bruni, of the NY Times, for my first menu as a Chef de Cuisine at Franny’s, in Brooklyn NY.

My fiancé Lydia has been working in restaurants and bars for over 11 years. Her experiences have given her undeniable lessons in hospitality, and most importantly, the ability to understand a guests needs before they do. She has for the last three years consitraned her thirst for knowledge on the beverage side of the business. She has studied wines, liquors, tea and coffee, and this has led her to working as a mixologist in some of New York City’s best cocktail bars. Most recently she was behind the stick at PDT, a speakeasy style cocktail lounge in Manhattan’s East Village, where she was able to take her knowledge of cocktails to a whole new level.

Simply put we are eager to share our experiences with your guests. I feel our experiences working and learning about food and beverage at some of the best restaurants in the country should be a tremendous asset to your guests. I look forward to discussing the possibilities with you.
